Quinoa Stuffed Peppers
Ingredients:
2lbs lean ground beef (grass fed & local)
4-6 red bell peppers
1 cup quinoa
1 can black beans
1 can corn
1 red onion
2 tomatoes
4-6 cloves garlic
Fresh cilantro
Taco Seasoning
Directions
Pre-heat oven to 350 degrees.
Place quinoa in InstantPot and pressure cook for 1 minute. Do not release pressure. Allow natural release then remove.
While quinoa is coming up to pressure, saute onions, garlic, and tomatoes.
Added ground beef and cook 80% through.
Mix in all remaining ingredients and stir throughly.
Cut peppers in half and remove seeds and white
Stuff peppers fully with mixture and place in a baking dish.
Add a few ounce of water to bottom of baking dish and place in oven for 30-40 minutes (until peppers are soft)
