World’s Best Shrimp Tacos
Ingredients:
Slaw:
3 cups angel hair coleslaw mix
1/2 cup thinly sliced red onion
4 thinly sliced radishes
3 tablespoons optional minced fresh cilantro
2 tablespoons about 2 limes fresh lime juice
1 teaspoon honey
1/4 teaspoon salt
1/4 teaspoon cracked black pepper
Remoulade:
1 cup sour cream
1 minced clove garlic
3 minced green onions
1 tablespoon dijon mustard
3 teaspoons fresh lemon juice
2 teaspoons chopped fresh dill
Shrimp:
1.5lbs shrimp
1 to 2 tablespoons Cajun seasoning
for frying olive oil
6-8 street tacos (flour)
Directions
For the coleslaw: In a medium bowl, combine the coleslaw mix, red onions, radishes, and cilantro. In a separate small bowl, whisk together the lime juice, honey, salt, and pepper. Add to the coleslaw mixture, tossing gently to coat.
For the remoulade: In a small bowl, combine the sour cream, garlic, green onions, mustard, lemon juice, and dill. Cover and refrigerate until needed.
For the shrimp: Place on a plate and pat dry with a paper towel. Coat with cajun seasoning. Heat a pan on medium-high and pour in olive oil to coat bottom of pan. Cook shrimp
Assemble: Spread remoulade on center of street taco followed by coleslaw mix. Place 3-4 shrimp in the center of each street taco. Serve with sliced avocado and lime wedges!
